The Brasserie

Get swept up into a whirlwind of French romance and gastronomy through the Feast of Versailles, an exquisite menu crafted by the chefs at The Brasserie, inspired by 100 years of fine French gastronomy served at the world renowned and World Heritage Site, Palace of Versailles from the 1600s to 1700s. This experience, presented by Chef de Cuisine, Clement Torrente and Executive Pastry Chef, Gael Moutet is only available for dinner once a month on Oct 23 and Nov 27, 2020. Feeding into its theme, the ingredients featured are grown in the Palace’s famed Gardens Orangerie, the nearby Potager du Roi and delicacies first introduced to France and in French cuisine.
Chef Clement Torrente reminisces his youth in Versailles and thus taking inspiration from his adventures and reflecting them in the dishes featured in the feast including, Amuse Bouche of Royal Oyster, Snail Croquette, Vegetable Tartelette and Lobster & Bisque, a clear beef broth with sweetbread, barley, cress and black truffles followed by Torched Ocean Trout, trout roe, crispy fish skin, Jerusalem artichokes and green pea and parsley emulsion. The piece de resistance, however, is the glorious Le Pithibier De Louis — a beef and foie gras pithivier, watercress salad and porto sauce.
Desserts are crafted by Parisian native, Chef Gael Moutet, showcasing three quintessential French desserts — wild strawberries from the Gardens of Le Nôtre on a cloud of brie cream cheesecake with strawberry sorbet, an Orange Chocolate Mousse and sweet endings come with his Evolution of the Macaron — a favourite of Queen Marie-Antoinette. Complement your dining experience with an option to pair each course with glasses of wine or cocktails, inspired by the royalty who resided in the Palace of Versailles.
